Sunflower Oil is one of the most widely used oil aroud the world. The kernel accounts for 70% of the seed and the oil content is about 40%-45% in the seeds.

The sunflower seed is the fruit of the sunflower. There are three types of commonly used sunflower seeds. Linoleic (most common), high oleic, and Nusun. In the last decade, high stearic sunflower lines have been developed in Spain to avoid the use of partially hydrogenated vegetable oils in the food industry.

Sunflower seeds are first subjected to decortication to obtain high protein meal, the decorticated sunflower seeds are subjected to mechanical extraction. In one method only pre-pressing is carried out leaving 18 to 20% as residual oil in the pre-pressed cake. The second method is full pressing is carried out in screw presses leaving 10 to 12% residual oil in the fully pressed cake. For recovery of residual left over oil in the cake, the cake is subjected to solvent extraction process.
